VANILLA AND CHOCOLATE MARBLE CAKE

I made this cake for the first time when I had a sudden urge to have a piece of cake for tea. Now, I'm always up for a good, rich chocolate cake, but at times, when you are not in the mood for decadence, or find an itsy-bitsy amount of cocoa lying at the bottom of the tin (as in my case), this spongy little marble cake saves the day.

For Vanilla And Chocolate Marble Cake, you will need:
  • Powdered Sugar - 1/2 cup
  • Soft Butter - 1/4 cup+1 tsp(at room temp)
  • Egg - 1
  • Flour - 3/4 cup + 1 tbsp
  • Baking powder - 3/4 tsp
  • Vanilla essence - 1/2 to 1 tsp
  • Milk - 1/4 cup + 1 tbs
  • Cocoa powder (unsweetened)- 2 tbsp.
(Measurements used are : 1 cup= 250 ml and 1 tbsp= 15 ml )

You will also need the following tools:

# a bowl,
# a spatula,
# a pastry brush,
# a balloon whisk,
# a silicon cake mould (5-6 inches in diameter)
# a baking sheet,
# a wire rack,
# a skewer.

  • Pre-heat the oven at 180°C.
  • In a bowl, cream the butter and the sugar using a balloon whisk. No need to whisk a lot, because if too much of air is incorporated at this stage, the cake will rise too much while baking, and then it will sink in the middle while cooling.
  • Add in the egg and mix well.
  • Now add in the milk, and the baking powder, and lightly mix in.
  • Now divide the cake batter into 2 portions. Into half the batter, add the vanilla and mix in. Into the other half, add the cocoa powder and 1 tbsp of milk and mix in.
  • Grease a smallish cake tin/mould with little butter, and dust it with little flour.
  • Pour the two kinds of batter, a big spoonful of each, so as to make a white and brown alternative pattern. Now with the help of a skewer, draw in the batter to give it a marble effect, like shown below.
  • Place the cake tin/mould on a baking sheet and put it in the pre-heated oven, and bake at 180°C for 45 mins or till a skewer comes out clean when inserted in the middle of the cake.
  • Let it cool completely on a wire rack and then enjoy a slice.
Don't forget to tell us how it tasted. Your bouquets and brickbats are equally welcome!!
