CARAWAY MADEIRA CAKE

      As exotic as it may sound, this cake does not contain madeira (wine)! However, this seed cake is a variation of a popular Irish cake, the Madeira, which was originally made to be nibbled by the ladies as they sipped their port wine, hence the name. The caraway (ajwain) seeds give this cake a delicious flavour, along with a touch of texture.

To prepare Caraway Madeira for 8 people, you will need:

  • 1 cup butter (softened) plus a little extra for greasing
  • 1 cup brown sugar
  • 3 eggs beaten slightly
  • 2.5 cups flour
  • 1 tbsp caraway seeds
  • 6 tbsp of milk
  • 2 strips of chopped citron peel.
  • Grated rind of 1 lemon

    Now, just follow these simple steps to bake a delicious Caraway Madeira:

    • Grease the baking tin and line with baking parchment.
    • Cream the butter and  brown sugar together in a bowl until pale and fluffy.
    • Gradually add the beaten eggs to the creamed mixture.
    • Strain the flour into the bowl and gently fold into the creamed mixture.
    • Add the caraway seeds, lemon rind and milk.        
    • Gently fold in until thoroughly blended. Pour the mixture into the baking tin and level the surface.
    • Bake in a preheated oven, 160 degree C/ 325 degree F, for 20 minutes.
    • Remove the cake from the oven when it's done and place the pieces of citron peel on top.
    • Return it to the oven and bake for another 40 minutes or until the cake is well risen. Let the cake cool in the pan for 10 minutes. 
    Our Caraway Madeira is now ready to serve!! 

    SPICY TIP: A dessertspoon of marmalade added to the madeira cake when mixing gives a tangy flavour and keeps it moist.
